Dabeli


Time 15 min
Ingredients

For the filling

Boiled and mashed potatoes 1 cup
Cumin seeds 1/2 tsp
Pinch of asafoetida
Dabeli masala 2 tsp
Tamarind dates chutney 2tbsp
Oil 1tbsp
salt to taste
Burger buns 6-7
Butter 1 tbsp

Water 1/2 cup


To serve

Finely chopped onion 1/2 cup
Masala peanuts 1/2 cup
Finely chopped coriander 1/2 cup
Sev 1/2 cup
Fresh pomegranate (anar) 1/2 cup
Tamarind dates chutney 4-5 tbsp


Method

For the filling

Heat the oil in a pan. Add the cumin seeds. When they crackle, add the asafoetida, dabeli masala, potato, salt and mix well. Let it cook for 4-5 min. Switch off the flame. Keep aside to cool.
Serving
Slice the burger buns into halves horizontally and fry the buns in a pan/tava using a 1/2 tsp butter for each bun.
Place a portion of the filling on the lower half of each bun, along with the chopped onion, peanuts, coriander, sev, pomegranate, Tamarind dates chutney.

Tip
Serve with Tamarind dates chutney & green chutney

Chili fry

Time 5 min
Ingredients
Green chilies 10-12
Salt to taste
Oil for frying

Method
Take chilies in strainer. Directly dip into hot oil. Fry for 2-3 min. Take out in a bowl and sprinkle salt. Taste good with vada, dhokala etc.
The chili served with bhelpuri is steamed in cooker for 4-5 min then after cooling salt is added. Steam makes it non spicy.  

All in one Soup (Capsicum-Cabbage-Carrot-Onion)

Time 20 min
Ingredients

Medium sized capsicum 1
Medium sized chopped onion 1

Chopped cabbage 1/4 cup

Chopped carrot cubes 1/2 cup
Cornflour 1 tbsp + 1/2 cup water

Pepper powder 1/4 tsp

Maggi masala cubes 1 or 2 as per your taste
salt to taste

Olive or any other vegetable oil 1/4 tsp

Coriander for garnishing

Method
Blend in blender chopped cabbage, capsicum, onion, carrot. Strain the water from the blended vegetables. Use strained water for making soup.
Heat oil in pan add strained water. Stir well. In a separate bowl take cornflour and water, dissolve cornflour so that no lumps are formed. Then add into the pan, stir well. Soup will start getting thickened, then add pepper powder, salt, magi masala cubes. Stir well. Add water according to the consistency of soup you want. Serve hot.
Tip
I do not remove the vegetables after straining i add it to make soup.
To remove the smell of the vegetables u can steam chopped vegetables for 5-7 min in steamer.
U can even make soup without capsicum
